The team at Regent Singapore, A Four Seasons Hotel’s Summer Palace Restaurant, led by Chinese Chef Liu Ching Hai and team has made something that once seemed impossible a reality by creating a dedicated gluten-free Cantonese menu.
How can Cantonese food be gluten-free? The magic in their recipes came about when they met a supplier whose wife is gluten intolerant. Their hunt for gluten-free produce was over! With the right supplier in hand, Chef Liu made it his mission to create a worthy gluten-free menu – one which will even satisfy regular diners.
Once you experience the authenticity in the cooking you’ll be quick to immerse your tastebuds into the standout flavours, textures, smells, and presentation of each dish and forget it’s gluten-free.
The fried chicken with garlic served with plum sauce was one of the favorites on the table. The batter is where most of the gluten in normal recipes come from and considering one of the best parts about fried chicken is usually the batter, the chicken on their menu was comparably delectable and tender.
Another surprise on the menu, is the fried brown rice with wolfberries, pine nuts, mushrooms and diced kai lan; which was much lighter than your usual chow fan, but with all the flavor, textures, and satisfaction a regular fried rice dish brings.
With a menu of nine items plus a choice of hot or cold double-boiled pear with gingko nuts as dessert, in our opinions, the gluten-free menu can even suffice our bellies as a standalone menu.
